The Green Man

Friday 7th July will go down in the annals of the Bailliage Regional of Phuket as a highly memorable and enjoyable occasion.

Following the Intronisation of five new members and the promotion of four others, conducted by Conseil Magistral Mr Chandran Arul from Singapore, assisted by Phuket’s Bailli Delegue, Mr Howard Digby-Johns, over 30 members and guests sat down to celebrate the Chapitre at The Green Man in Chalong in the south of Phuket island.

Chef Ryan Waddell, a 27-year old American, had prepared an eleven-course meal and there were eight different wines to accompany the dishes. The first course was a poached cold Maine lobster served with a delicate mayonnaise. This was followed by one of the highlights of the evening, Gnocchi in an Epoisses cheese sauce (‘to die for’ was one of the more conservative comments expressed!)

Next came a selection of goose rillettes with rabbit and duck breast pates, served with a Cumberland sauce and cornichons. A raspberry sorbet, flavoured with raspberry Absolut Vodka was offered as a palate cleanser before Chef served a braised Kobe beef cheek, with stewed autumn vegetables. The main course was a saddle of venison with spaetzle and red cabbage. The meal finished with a cr?me caramel dessert and, finally, a delicious selection of soft French cheeses.

Featured wines were an 11-year old Chanoine Tsarine champagne; Quinta de S Francisco Obidos 2001; Poggio Morino Morellino di Scansano 2003; Brunello di Montalcino 2000; a fine Tawny Port from the house of Manuel D Pocas and, with the French cheeses, a 1998 Elfenhof Ruster Trockenbeerenauslese Chardonnay.

Members of the council of the Phuket Bailliage introduced the courses and wines throughout the evening.

The evening was enhanced by a Service Brigade of eight young Thai ladies who performed with the grace, elegance and precision of the Corps de Ballet of the Bolshoi, under the guidance and tutelage of Khun Nui of The Green Man

At the end of the meal Conseil Magistral Chandran Arul described the food and wines as ‘unusually good!’ and he praised Chef Ryan and his Kitchen Brigade for their exceptional efforts. He also paid tribute to the superb service offered by the Service Brigade under the command of Khun Samprasong.
